Best and Fastest Rotisserie Chicken Sauce

This sauce works well on roast chicken, roasted cauliflower, and as a salad dressing.  Perk up those dishes with the unexpected zip and tang of capers.

Ingredients

  • 1/2 c extra virgin olive oil a garlic infused version would work great
  • 1 ea lemon juiced and zested
  • 2 Tb capers chopped
  • 2 tsp parsley chopped
  • 1/2 tsp salt kosher
  • 1/4 tsp black pepper

Instructions

  1. Stir all ingredients together with a fork or spoon. 

Recipe Notes

  1. Use the best quality olive oil you can afford.  It will brighten up the chicken. 
  2. If you have a very fruity, grassy, or strong extra virgin olive oil, mix with equal parts regular olive oil, otherwise this sauce will be too strong.  
  3. Half a cup of olive oil should be plenty to douse your rotisserie chicken in.  Is your mouth watering yet? 
  4. Keep up to 1 week in the refrigerator.  Warm briefly in the microwave to let the oil return back to liquid format before using.
