Nothing says cheap date or “I’m in a hurry” like serving a $5 Costco Rotisserie chicken for dinner. Take your bae’s* breath away by adding this equally quick sauce on top.
Lemon Caper Vinaigrette
This recipe is inspired by the rotisserie chicken sold at Sonoma Chicken Coop, a restaurant chain now closed.
They had three locations in Silicon Valley, but the last location near the San Jose airport apparently shut down due to poor management, lack of business, and rising rent.
That’s unfortunate.
Luckily, this sauce is easy enough to recreate.
Extra virgin olive oil, capers, parsley, lemon zest and lemon juice.
A garlic infused extra virgin olive oil would work well too if you have it.
Douse it all over the chicken, and make the love happen in your mouth.
In order to zest the lemon, you would rub the outside of the lemon skin with a microplane grater or the smallest holes on a box grater just until the yellow skin comes off in little flecks.
If you don’t have a grater, skip this step.
The Must Have Ingredient
What’s the special ingredient? Capers.
You may not have them in your house, but it’s kind of nice to have and lasts for quite a while in the refrigerator.
Capers are special but come in small jars. In this case, we like small packages.
I made this chicken for the homeless shelter, and one of the women commented with delight that she had never tasted them before.
Apparently, they can perk up someone’s life too.
Whether that life is yours or someone else’s, add a twist to that rotisserie chicken from the grocery store with this sauce.
*bae: pronounced bay, is a term of endearment for a loved one, shortened from the word “babe”
Lovely Tips:
- Use the best quality olive oil you can afford. It will brighten up the chicken.
- If you have a very fruity, grassy, or strong extra virgin olive oil, mix with equal parts regular olive oil, otherwise this sauce will be too strong.
- Half a cup of olive oil should be plenty to douse your rotisserie chicken in. Is your mouth watering yet?
- Keep up to 1 week in the refrigerator. Warm briefly in the microwave to let the oil return back to liquid format before using.
