Portabella mushroom pizzas to the rescue!
You’re not so much cooking as assembling.
Assemble dinner with just 3 ingredients for an EASY sheet pan meal.
Keto, low carb, & vegetarian friendly
Chuck the pizza crust, and use these portabella mushrooms instead.
No, it won’t be crunchy, crispy like regular wheat pizza crust,
But it will be JUICY. Mushrooms are JUICY, and we like things nice and JUICY!

WTH is a portabella mushroom?
A portabella mushroom is a fully developed, overgrown cremini mushroom.
A cremini mushroom is the brown version of a white button mushroom.
A portabella mushroom is larger, chewier, and meatier than regular mushrooms.
They are LARGE enough to be your own personal pizza.
Serve 2 mushroom caps per person.

Do you need to clean the mushrooms?
In the spirit of doing as little as possible, the short answer is NO.
You don’t HAVE to scrape out the gills or take off the stem. Many recipes will have you do that, but those are all edible parts of the mushroom.
Also, beware of washing the mushrooms in water. They will soak up all that water which will leach out when baking.
Instead, brush any visible dirt off the mushroom with a damp towel or paper towel.
Step by Step instructions
Time needed: 15 minutes.
- Preheat oven to 350 degrees F.
Get the oven nice and hot for our pizzas.
- Put portabella mushrooms on a sheet pan, stem side up.
Because mushrooms are moist, they don’t really stick to the pan or foil. No oil is needed.
- Spread on the sauce.
You can use pizza sauce or any tomato marinara sauce for spaghetti. These come preseasoned with herbs, so you don’t have to make your own.
- Top with shredded cheese.
Mozarella, jack, cheddar or whatever version of cheese you please!
- Bake for 10-15 minutes.
The cheese should be melted and the mushroom should be cooked through.
- Garnish with optional herbs.
A quick chop of fresh basil, oregano, or parsley is all that you need. If using dried herbs, put on the cheese prior to baking.
- Serve hot!
This is a knife and fork meal, so make sure you have the table set with utensils.
Hot and Spicy variation
Want to spice things up?
Try this jalapeno cheddar version.

All you need is a jalapeno and some cheddar cheese.
Since I didn’t have grated cheddar cheese on hand, I took some cheddar cheese slices and just sliced them up.
Same with a green jalapeno.

What to serve with Portabella Mushroom Pizzas?
- green salad
- any Italian red wine
- gluten free garlic bread (if not keeping it low carb)
Friendly, Encouraging Tips
- Wash mushrooms with a damp towel, rather than running under water. They will soak up the water and create a wet mess when baked.
- You don’t HAVE to take off the stem and scrape out the gills of the mushrooms. They are all edible.
- If using dried herbs, sprinkle onto cheese prior to baking.
- Jalapeno Cheddar variation: use cheddar cheese and top with a sliced jalapeno before baking.

Sheet Pan Portabella Mushroom Pizzas

Ingredients
- 4 ea portabella mushrooms
- 1/2 c pizza sauce or marinara sauce
- 1 c grated mozzarella cheese or cheese of your choice
Optional Garnish
- chopped basil or parsley
Instructions

Preheat oven to 350 degrees F.

Put portabella mushrooms on a sheet pan.

Spread pizza sauce on top of each mushroom. This is about 2 Tb per mushroom.

Spread cheese between each mushroom. This is about 1/4 c of cheese per mushroom.

Bake for 10-15 minutes until the cheese is melted and portabella mushrooms are cooked through.
