Forget the hamburger bun. Slap on some gluten free sandwich bread and make this hamburger sandwich from a 3 Michelin star chef.
This hamburger sandwich is inspired by the burger at Dad’s Luncheonette in Half Moon Bay, CA.
A former chef of a 3-Michelin star restaurant, he left the world of fine-dining to be a Dad and make these burgers.
Sandwich Bread
Sandwich bread instead of hamburger buns.
This may seem like a minor detail, but this is huge.
Now you can make burgers with regular, old gluten free sandwich bread you have lying around.
No guilt. No shame.
A sturdy sliced bread such as sourdough is preferred, rather than Wonder bread.
You do want the bread to be able to hold the burger without getting squashed so easily.

Work off of a large cutting board or sheet pan to build multiple burgers.
Dad’s Sauce – The server at the restaurant said this sauce was made of lemon, salt, pepper, egg yolk, and honey.
So it’s kinda like a sweet mayo. We just use jarred mayo and honey.
Sunny-side up Eggs – Yes, this is a burger that has eggs.

This is a stainless steel pan, and it was a great big pain to clean up. A non-stick pan is recommended. See suggestion at the end of the post.
The original sandwich does use pickled red onions.
However, that requires more dirty dishes, and we don’t want to do any more of those.
A non-stick frying pan such as this one is recommended for easy clean-up.
Lovely Tips:
- This sandwich does not have cheese. The fried egg with a still soft egg yolk makes this dish creamy like cheese.
- If you don’t like mayo, remove it entirely. It will still taste good!
- For a vegetarian option, substitute the beef with sauteed mushrooms.
- Don’t forget to season the ground beef patties well with salt and pepper for best flavor.
- Grassfed beef is ideal for this sandwich. Use if you can find and don’t mind the extra cost.

3-Michelin Star Hamburger Sandwich
Ingredients
- 4 leaves red leaf lettuce
- 8 slices sandwich bread
- 8 tsp olive oil
- 4 Tb mayonnaise
- 4 tsp honey
- 2 tsp cooking oil
- 1 lb ground beef
- salt and pepper
- 4 slices cheddar cheese
- 4 ea eggs
Instructions

Wash red leaf lettuce. Wrap in paper towel or a clean dish towel to dry.

Spread each slice of bread with 1 tsp of olive oil. You only need to oil one side. Toast in toaster oven or in the frying pan over medium heat. You are not toasting until crispy. You are just refreshing the bread and getting a slight crunch on the outside.

Once bread is toasted, put 4 slices, oiled side down, on a cutting board or plate. Spread the non-oiled side with 1 Tb mayo and 1 tsp honey for each slice.

Heat the frying pan to medium heat. Shape ground beef into 4 patties. Try to make them thin enough so that they almost are almost the size of the sandwich bread, but it won't be perfect. Season each side with salt and pepper.

Add 1 tsp cooking oil to pan. Fry the beef patties for 2-4 minutes on each side. The amount of time you cook them will depend on how well done you want them. If well done, the juices should be clear. If you prick the patty and red juice comes out, it is either rare or medium rare. The thinness of the patty will also vary the cooking time.

Once cooked, place each patty on the sliced bread with mayo and honey. Top with cheese. Let it sit and rest while you fry the eggs.

Clean out pan in order to fry the eggs. Heat over medium heat and add 1 tsp cooking oil. Crack eggs into pan. Fry one at a time if 4 eggs is too much to handle or the pan is not big enough. Cook until whites are no longer runny.

Slide one egg onto each hamburger patty. Top with red leaf lettuce and second slice of bread. Careful not to let the yolk run all over when you take a bite.
